Vegan Chipotle Tortilla Soup
Ingredients
4 Corn tortillas
1 Onion
2 Garlic cloves
1 Red bell pepper
1 Green bell pepper
2 Tomatoes
1 can of Black beans
1 can of Corn
1 Chipotle in adobo
1 liter of Vegetable broth
Olive oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Begin by cutting the tortillas into strips and frying them until crispy, then set aside.
Step 2 : Next, peel and chop the onion and garlic.
Step 3 : Also cut the peppers and tomatoes into cubes.
Step 4 : In a skillet, sauté the onion and garlic, then add the peppers and tomatoes.
Step 5 : Then, add the beans, corn, and chipotle in adobo, cooking for a few minutes.
Step 6 : Next, pour in the vegetable broth and simmer on low heat, seasoning with salt and pepper.
Step 7 : Finally, serve the hot soup accompanied by crispy tortillas.
