Ingredients

1 Chopped onion

2 Chopped garlic cloves

2 Diced carrots

2 Chopped celery stalks

1 Diced red bell pepper

1 can of Crushed tomatoes

4 cups of Vegetable broth

1 cup of Fresh spinach

2 tablespoons of Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a large pot, heat the olive oil and cook the onion and garlic until golden.

Step 2 : Add the carrots, celery, and red bell pepper to the pot and cook until tender.

Step 3 : Then, add the crushed tomatoes and vegetable broth, bring to a boil, and simmer for 15 minutes.

Step 4 : Add the fresh spinach and cook for 5 minutes.

Step 5 : Season with salt and pepper, serve hot, and enjoy.
