Ingredients

1 cup of White rice

1 can of Beans

1 Chopped onion

2 Chopped garlic cloves

1 Chopped carrot

2 Chopped tomatoes

1 teaspoon of Ground cumin

1 teaspoon of Sweet paprika

Olive oil

4 cups of Vegetable broth

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a large pot, heat a little olive oil.

Step 2 : Add the onion and garlic, and sauté until golden.

Step 3 : Then, incorporate the carrot, tomatoes, and spices (cumin and paprika), cooking for a few minutes until the vegetables are tender.

Step 4 : Add the previously washed and drained rice and beans, mixing well all the ingredients.

Step 5 : Pour in the vegetable broth and bring the soup to a boil.

Step 6 : Reduce the heat and simmer for approximately 20-25 minutes, or until the rice is cooked.

Step 7 : Finally, taste the soup and adjust the seasoning with salt and pepper as desired.
