Panamanian-Style Mondongo Soup

Ingredients

2 kilograms of Mondongo

3 Cebollas cabezonas

1 Aji

Cilantro

½ kilogram of Rabito de puerco ya cocinado

3 Dientes de ajo

1 pinch of Sal

1 Pimentón rojo

1 Pimentón verde

2 Zanahoria

Salsa de tomate

1 cup of Guisantes

Aceite

1 pinch of Pimienta

Preparation

Step 1 : Clean the mondongo with lemon and cut into strips.

Step 2 : Place in a pot with water and boil until tender.

Step 3 : Add salt and cook for two hours.

Step 4 : In a skillet, make a sofrito with onion, peppers, aji, cilantro, garlic, salt, and pepper.

Step 5 : Add to the mondongo pot along with cooked and chopped pork tail.

Step 6 : Add more water and cook for 30 minutes.

Step 7 : Then add carrots, tomato sauce, peas, and adjust the salt.

Step 8 : Add chopped cilantro and cook for an additional 20 minutes.

Step 9 : Enjoy!
