The history dates back to the African roots of the Afro-Antillean population that came to Panama during the construction of the Panama Canal. It is a tradition to prepare it in large quantities during family celebrations or popular festivities, as it symbolizes generosity, hospitality, and togetherness among people.

Panamanian Sancocho
Ingredients
1 Backyard chicken, chopped
1 Large onion
5 Chilies
5 Garlic cloves
4 Cilantro leaves
1 Cilantro branch
1 tablespoon of Oregano
1 pound of Ñame
2 tablespoons of Oil
2 liters of Water
1 pinch of Salt
Preparation
Step 1 : To begin, peel, cut, and wash the ñame before setting it aside.
Step 2 : Next, in a pot over heat, place oil along with the chicken, onion, chilies, garlic, and previously chopped cilantro.
Step 3 : Sauté this mixture for about 2 minutes, then add 4 cups of water and a little salt.
Step 4 : Cover the pot and cook for 40 minutes.
Step 5 : Once this time has passed, add the ñame and the remaining water, making sure to cover the entire preparation.
Step 6 : Let it cook until both the chicken and ñame are tender.
Step 7 : Then, check the salt and add a branch of cilantro, as well as more cilantro if you want a more intense flavor.
Step 8 : Wait for the mixture to boil for an additional 5 minutes and then remove from heat.
Step 9 : Finally, serve this delicious dish very hot to enjoy anytime.
