Ingredients
1 kilogram of Cow foot
2 cups of Beef broth
½ kilogram of Pumpkin
½ kilogram of Potatoes
½ kilogram of Cassava
½ kilogram of Yam
½ kilogram of Name
3 Sweet corn cobs
1 Green bell pepper
1 Large onion
1 Ají chombo
5 Garlic cloves
6 Chopped cilantro leaves
½ cup of Chopped green onion
2 Chopped cilantro sprigs
1 tablespoon of Oil
2 Meat or seasoning cubes
30 milliliters of Lemon juice
¼ cup of Vinegar
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare this delicious dish, start by cleaning and rubbing the cow feet with lemon juice, vinegar, and salt.
Step 2 : Next, add 2 cups of water and soak for 10 minutes.
Step 3 : After this time, remove the feet and rinse thoroughly with water.
Step 4 : Then, cook the feet for 30 minutes in a pressure cooker with enough water and 2 tablespoons of salt.
Step 5 : Once cooked, release the pressure and remove the feet, which should be tender.
Step 6 : Reserve 2 cups of the cooking broth.
Step 7 : Then, peel and cut the pumpkin, potatoes, yam, cassava, and corn cobs into pieces.
Step 8 : Cook these vegetables in a pot with enough water until they begin to soften.
Step 9 : In a separate skillet, heat a bit of oil and sauté the chopped bell pepper, onion, ají, and garlic.
Step 10 : Then, add the cilantro and finely chopped green onion, as well as the meat cubes.
