Panamanian Beef Ribs Sancocho
Ingredients
2 kilograms of Beef ribs cleaned and chopped, 1.5 kg of potatoes
1 kilogram of Yuca
0.5 kilogram of Ñame
2 Fresh corn ears
2 pounds of Squash
1 tablespoon of Olive oil
3 Chopped peppers
0.5 Paprika
1 Large onion
1 Celery stalk
4 Garlic cloves
4 Cilantro leaves
2 Cilantro sprigs
1 tablespoon of Oregano
2 liters of Water
1 pinch of Salt
1 kilogram of Potatoes
1 pinch of Pepper
Preparation
Step 1 : Wash the beef ribs thoroughly and cook them in a pressure cooker with 3 cups of water for 30 minutes.
Step 2 : Meanwhile, peel and cut the yuca, potatoes, ñame, corn, and squash into pieces, and set aside.
Step 3 : After the time has elapsed, remove the pot from heat and release the pressure to check that the meat is tender.
Step 4 : In a separate pot, bring the meat with the broth to a boil, removing the layer of fat on top.
Step 5 : Add 2 cups of water and let it boil.
Step 6 : Add the yuca, corn, squash, and potatoes, and when they start to soften, add the ñame and more water until covering the ingredients.
Step 7 : In a separate skillet, sauté the onion, peppers, paprika, and garlic finely chopped, then add them to the soup along with cilantro, celery, and oregano.
Step 8 : Add salt, pepper, and cilantro, and cook for another 5 minutes.
Step 9 : Finally, serve the soup hot, and you can accompany it with lemon slices.
