Panamanian Beef Rib Soup
Ingredients
2 Corn on the cob
6 Cilantro leaves
2 kilograms of Beef ribs
1 kilogram of Yuca
0.5 kilogram of Pumpkin
0.5 kilogram of Chayote
4 Garlic cloves
1 tablespoon of Oregano, salt, and pepper to taste
2 Cilantro sprigs
3 Sweet peppers
1 Medium onion
4 cups of Beef broth
Preparation
Step 1 : Cut and wash the beef ribs.
Step 2 : Chop the onion and garlic into small cubes.
Step 3 : Peel and cut the chayote into large and small pieces.
Step 4 : In a pot over heat with hot oil, add the beef ribs to sauté.
Step 5 : Then add the garlic, sweet peppers, and onions, stir everything and cover for 20 minutes.
Step 6 : After this time, add the beef broth and chopped cilantro leaves, along with small pieces of chayote to thicken the broth.
Step 7 : Stir and cook for 10 minutes.
Step 8 : Next, add large pieces of chayote, pumpkin, and corn cut into pieces.
Step 9 : Add one liter of hot water and continue cooking.
Step 10 : After 45 minutes, adjust salt and pepper to taste.
Step 11 : Add more chopped cilantro, stir, and wait for the vegetables to be ready to serve the broth.
