Lentil and Pumpkin Soup
Ingredients
1 cup of Dry lentils
2 cups of Pumpkin cubes
1 Chopped onion
2 Sliced carrots
2 Chopped celery stalks
4 cups of Vegetable broth
2 Minced garlic cloves
1 teaspoon of Cumin
1 teaspoon of Paprika
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare the lentil soup, first rinse the lentils and soak them.
Step 2 : In a large pot, sauté the onion, garlic, celery, and carrots until soft.
Step 3 : Then add the drained lentils, chopped pumpkin, cumin, and paprika, mixing well.
Step 4 : Next, pour in the vegetable broth over the mixture and bring to a boil.
Step 5 : Reduce the heat and let simmer until the lentils are tender, about 30-40 minutes.
