Ingredients

5 Tomatoes

½ Potato

½ Onion

1 Garlic clove

2 Dried tomatoes

2 tablespoons of Tomato purée

1 pinch of Paprika

1 pinch of Thyme

1 teaspoon of Sugar

Olive oil

Vegetable broth

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Peel and cut the tomatoes and onions into strips, while finely chopping the garlic and setting it aside.

Step 2 : In a skillet, sauté the tomatoes first on their own to toast them, then with a bit of oil until they brown.

Step 3 : Next, place the tomatoes, onion, and garlic in a pot and cook over high heat for one minute.

Step 4 : Add a splash of olive oil and cook at that temperature until the onion becomes transparent.

Step 5 : Then, add the peeled and cut half potato along with the broth and cook for about 10 minutes with the pot covered.

Step 6 : Add the tomato purée, dried tomatoes, paprika, and thyme, and cook everything covered for 40 minutes, stirring occasionally.

Step 7 : After this time, add a teaspoon of sugar to reduce acidity, blend the mixture, and serve in bowls.
