Fish Head Soup with Yam
Ingredients
1 kilogram of Whole fish (snapper, grouper, or kingfish)
½ kilogram of Yam
1 Medium onion
1 Handful of fresh recao (cilantro, parsley, and scallion)
1 Aji chombo
4 Garlic cloves
4 cups of Water
1 teaspoon of Oil
2 Lemons
1 pinch of Salt
1 pinch of Black pepper
Preparation
Step 1 : Clean the fish and cut it into slices, using the head to add more flavor to the soup.
Step 2 : Set aside.
Step 3 : Then, peel, cut, and wash the yam, and set it aside as well.
Step 4 : In a saucepan, heat the oil and sauté the chopped garlic.
Step 5 : Add the chopped onion and sauté for 3 more minutes.
Step 6 : Next, add the water and half of the fresh recao, bringing it to a boil.
Step 7 : Once boiling, add the yam and wait for it to soften.
Step 8 : At this point, add the fish with the head, the remaining recao, salt, and pepper.
Step 9 : Cook for 10 minutes.
Step 10 : Then, remove from heat and optionally add a splash of lemon juice.
Step 11 : Serve hot, accompanied by lemon slices.
