Ingredients

2 pounds of Cow foot

2 cups of Beef broth

Juice of 3 lemons

¼ cup of Vinegar

3 tablespoons of Salt

½ pound of Diced pumpkin

1 pound of Potatoes

1 pound of Peeled yuca

1 pound of Peeled ñame

4 Corn on the cob

1 tablespoon of Oil

2 tablespoons of Seasoning in powder

3 Garlic cloves

1 Green pepper

1 Onion

1 Ají (hotsauce or pepper)

¼ cup of Chopped cilantro

½ cup of Chopped onion

¼ cup of Chopped cilantro

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Cow feet are rinsed with water and soaked with lemon, vinegar, and salt for 10 minutes.

Step 2 : Then they are cooked with water and salt for about an hour, until tender, removing impurities.

Step 3 : Meanwhile, in another pot, pumpkin, potatoes, ñame, yuca, and corn on the cob are cooked in water for about 20 minutes or until soft.

Step 4 : In a separate skillet, chopped vegetables are sautéed with oil, cilantro, onion, and seasoning for about 3 minutes.

Step 5 : Once the vegetables are ready, add the cooked cow feet along with some broth, the sauté, cilantro, salt, and pepper.

Step 6 : Bring everything to a boil together for about 10 minutes.

Step 7 : Finally, the delicious cow foot soup is ready to serve and enjoy.
