Ingredients

4 Leeks

1 Onion

2 Potatoes

1 liter of Vegetable broth

Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Wash and slice the leeks, chop the onion, and peel and cut the potatoes into pieces.

Step 2 : In a large pot, heat a bit of olive oil, then add the leeks, onion, and potatoes, cooking over medium heat until tender.

Step 3 : Next, add the vegetable broth and bring to a boil, then reduce the heat to simmer until the potatoes are soft.

Step 4 : Once ready, remove the pot from heat and let the soup cool.

Step 5 : Puree the vegetables until achieving a creamy texture.
