Ingredients

500 grams of Dried chickpeas

30 milliliters of Olive oil

1 Peeled carrot

1 Peeled onion

1 Celery stalk

2 Garlic cloves

5 cups of Chicken broth

1 teaspoon of Oregano

½ teaspoon of Cumin

2 Bay leaves

Lemon zest

Coarse salt

Black pepper

½ cup of Chopped fresh parsley

Lemon juice

Olive oil

Preparation

Step 1 : Soak the chickpeas for six hours.

Step 2 : Next, peel and dice the onion, celery, and carrot, and chop the garlic cloves, reserving all ingredients.

Step 3 : In a hot skillet with olive oil, sauté the onion and add the remaining vegetables along with the chopped garlic.

Step 4 : Season and continue cooking.

Step 5 : Then, add the chicken broth, pre-soaked chickpeas, lemon peel zest, and bay leaves.

Step 6 : Lower the heat to the minimum and let it cook covered for 45 minutes.

Step 7 : Finally, serve hot with a little lemon juice and chopped parsley on top.
