Ingredients

5 pounds of Fresh beef ribs

1 Onion

5 Chilies

5 Garlic cloves

Cilantro

5 pounds of Yam

Salt

Preparation

Step 1 : To prepare this delicious sancocho, first wash the beef ribs well, which are cut into large pieces.

Step 2 : Then, add the onion, chilies, cilantro, and chopped garlic.

Step 3 : Next, place a pot over low heat and add the fresh beef ribs along with the chili, cilantro, onion, garlic, and salt to taste.

Step 4 : Add 3 cups of water, stir to ensure all ingredients are well mixed and adhered to the ribs, then cover the pot.

Step 5 : After about 20 minutes, or when the water has been absorbed, add the yam cut into the desired size and previously chopped.

Step 6 : Add more water until it covers the yam.

Step 7 : Periodically check the texture of the ribs and yam.

Step 8 : When the yam is tender, add more yam pieces to make the sancocho slightly thicker.

Step 9 : Once the yam is soft, add more cilantro to taste, adjust the salt, and wait about 5 more minutes before removing from heat.
