Beef Foot Soup
Ingredients
2 pounds of Beef feet
3 Garlic cloves
3 Green onion or chives
1 Celery stalk
1 Large green bell pepper
1 tablespoon of Onion powder
1 Sofrito packet
2 tablespoons of Liquid seasoning
1 tablespoon of Oregano
2 Chicken bouillon cubes
1 Aji (hot pepper)
1 Cilantro bunch
1 pound of Potatoes
1 pound of Yuca (cassava)
1 pound of Name (a root vegetable)
2 Corn on the cob
½ pound of Pumpkin
1 Large lemon
1 Orange
2 tablespoons of Vinegar

Preparation
Step 1 : Begin by washing the beef feet thoroughly with plenty of water, then add vinegar, lemon juice, orange juice, and salt to taste.
Step 2 : After a few minutes, rinse the feet with water.
Step 3 : Then, season the beef feet with half of the ingredients: sofrito packet, liquid seasoning, oregano, onion powder, chicken bouillon, bell pepper, garlic, onion, celery, aji, cilantro, all chopped into small pieces.
Step 4 : In a pot with enough water to cover the ingredients, bring to a high boil, cover, and cook for about 60 minutes or until the beef feet are tender.
Step 5 : Once the feet are tender, set aside some of the cooking broth and add the remaining ingredients that were seasoned earlier.
Step 6 : Next, add half of the cooked beef feet, stir, and add water to cover the feet.
Step 7 : Let it boil, and when the water is boiling, add the washed and chopped vegetables as desired.
Step 8 : Once the vegetables are tender, add the rest of the beef feet.
Step 9 : Taste and adjust the seasoning if necessary, adding salt or other spices according to your personal preference.
