Bean Soup with Ribs
Ingredients
1 pound of Red beans
1 pound of Beef ribs
8 cups of Water
1 tablespoon of Meat seasoning
1 cup of Chopped carrots
1 cup of Chopped potatoes
1 pound of Chopped cassava
1 tablespoon of Oil
½ Chopped green bell pepper
½ Chopped red bell pepper
½ Chopped onion
¼ cup of Chopped green onion
2 Crushed garlic cloves
¼ cup of Chopped culantro
¼ cup of Chopped cilantro
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Wash and soak the beans for about 1 hour, then drain.
Step 2 : Clean the ribs and place them in a large pot with water and red beans.
Step 3 : Cook over medium-high heat for an hour and a half until tender.
Step 4 : Add water if necessary and incorporate carrots, potatoes, and cassava.
Step 5 : Let it cook for another 20 minutes to soften the vegetables.
Step 6 : In a skillet, heat oil and cook garlic with the seasoning and the remaining chopped vegetables, except the cilantro, for 3 minutes.
Step 7 : Add this mixture to the beans and season to taste with salt and pepper.
Step 8 : After 10 minutes of cooking, add the cilantro and cook for 5 more minutes before turning off the heat.
Step 9 : Finally, serve this delicious bean soup with beef ribs and enjoy.
