Bean Soup with Beef Ribs
Ingredients
1 kilogram of Red beans
2 kilograms of Beef ribs
1 cup of Chopped carrots
1 kilogram of Peeled and chopped yuca
1 cup of Peeled and chopped potatoes
½ Chopped green pepper
½ Chopped red pepper
½ Chopped onion
3 Garlic cloves
½ cup of Chopped cebollina
4 Chopped cilantro leaves
1 Chopped cilantro branch
2 liters of Water
2 tablespoons of Oil
2 tablespoons of Powdered seasoning
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Soak the beans for 2 hours, then rinse and drain.
Step 2 : In a pot, place the cleaned ribs with 1 liter of water and the beans, cooking for approximately 1 hour.
Step 3 : Then add the carrots, yuca, and potatoes, letting them cook until tender, adding more water if necessary.
Step 4 : Meanwhile, sauté the onions, peppers, and garlic in a pan with a bit of oil, then add the cebollina, cilantro, and seasoning.
Step 5 : Incorporate this sofrito into the pot and season with salt and pepper, cooking for 10 minutes.
Step 6 : Finally, add the cilantro and cook for an additional 5 minutes.
Step 7 : Ready to serve hot, accompanied by tostones!
