Bean Soup with Beef Ribs
Ingredients

1 kilogram of Red beans
2 kilograms of Beef ribs
1 cup of Chopped carrots
1 kilogram of Peeled and cut cassava
1 cup of Peeled and chopped potatoes
½ Chopped green bell pepper
½ Chopped red bell pepper
½ Chopped onion
3 Garlic cloves
½ cup of Chopped scallion
4 Chopped cilantro leaves
1 Chopped cilantro branch
2 liters of Water
2 tablespoons of Oil
2 tablespoons of Seasoning powder
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : The beans are soaked for 2 hours, then washed and drained.
Step 2 : In a pot, place the clean ribs with 1 liter of water and the beans, cooking for about 1 hour.
Step 3 : Then add the carrots, cassava, and potatoes, cooking until they soften, adding more water if necessary.
Step 4 : Meanwhile, in a skillet with a bit of oil, sauté the onions, bell peppers, and garlic, then add the scallion, cilantro, and seasoning.
Step 5 : This sofrito is incorporated into the pot and seasoned with salt and pepper, cooking for 10 minutes.
Step 6 : Finally, add the cilantro and cook for 5 more minutes.
Step 7 : Ready to serve hot, accompanied by plantain chips!
