8 cups of Water
500 grams of Black beans
1 Green chili
1 cup of Olive oil
1 Large onion
6 Garlic cloves
4 teaspoons of Salt
2 tablespoons of Vinegar
4 tablespoons of Olive oil
1 teaspoon of Pepper
2 teaspoons of Cumin
2 teaspoons of Oregano
3 Bay leaves
Preparation
Step 1 : To prepare this recipe, it is important to start by washing the beans and placing them in a pot with the green chili, letting them soak covered in water for 8 hours.
Step 2 : Then, cook the beans in the same water for about an hour.
Step 3 : In a skillet, heat the oil and sauté the chopped onion, the crushed garlic cloves, and the chopped green chili.
Step 4 : Once the sofrito is ready, add the beans to the skillet, mash them, and cook while stirring.
Step 5 : Next, transfer the mixture to the pot where the beans were cooked, add salt, pepper, cumin, bay leaves, and vinegar, and let boil for another half hour.
Step 6 : Then, blend the preparation, and if necessary, add more broth.
