Ingredients

1 cup of Dried lentils

1 Chopped onion

2 Sliced carrots

2 Chopped celery stalks

1 can of Apricots in juice

4 cups of Vegetable broth

1 teaspoon of Ground cumin

2 tablespoons of Olive oil

Cilantro

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the lentil soup, rinse the dried lentils and soak them in water for at least an hour.

Step 2 : In a large pot, heat the olive oil and cook the onion, carrots, and celery until tender.

Step 3 : Then, add the drained lentils, vegetable broth, and apricot juice, and cook everything until the lentils are tender.

Step 4 : Next, add the cumin, salt, and pepper, and cook for a few more minutes.
