Panamanian cocadas are authentic sweet pleasures, made with grated coconut, sugar and condensed milk, baked until golden on the outside and soft inside.
It's a treat for coconut lovers and a favorite in Panama's pastry scene.
Panamanian Cocadas
Ingredients
3 cups of Coconut grated
400 grams of Raspadura or honey
½ cup of Water
1 Cinnamon stick
Orange peel
Preparation
Step 1 : In a saucepan, place the raspadura with water and the cinnamon stick, and cook for 5 minutes.
Step 2 : Then, add the freshly grated coconut and orange peel, cooking on low heat for about 30 minutes, stirring constantly.
Step 3 : The preparation is ready when the caramel no longer sticks to the bottom of the pan and the mixture forms firm grooves.
Step 4 : Remove the cinnamon and orange peel.
Step 5 : Using two spoons, take some of the mixture and form small balls which are placed on a tray.
Step 6 : Let cool and you can refrigerate to allow the mixture to set more.
Step 7 : Finally, the balls can be enjoyed cold or at room temperature.
