Ingredients

2 cups of Coconut milk

8 Ripe bananas

1 Small piece of ginger

Sugar

1 pinch of Salt

Ground cinnamon

Preparation

Step 1 : Bring the coconut milk to a boil in a pot for about 5 minutes.

Step 2 : Once boiling, add the chopped bananas and cook for approximately 3 minutes.

Step 3 : Then, mash the bananas until smooth.

Step 4 : At this point, thinly slice the ginger and add it to the mixture along with a pinch of salt and sugar to taste.

Step 5 : Let it cook over low heat until it thickens and the coconut milk has reduced slightly.

Step 6 : Serve the plantain mash cold or hot, and sprinkle with ground cinnamon to taste.
