1 cup of Cooked lentils

1 Chopped onion

2 Chopped carrots

2 Chopped celery stalks

2 Chopped garlic cloves

1 tablespoon of Olive oil

1 tablespoon of Soy sauce

1 teaspoon of Dried thyme

1 teaspoon of Dried rosemary

1 teaspoon of Salt

½ teaspoon of Pepper

4 cups of Mashed potatoes

2 tablespoons of Vegan margarine

Preparation

Step 1 : To prepare this delicious vegan lentil and mashed potato pie, first heat olive oil in a large skillet.

Step 2 : Then, add the onion, carrots, celery, and garlic, and cook until tender.

Step 3 : Next, incorporate the cooked lentils or crumbled tofu, soy sauce, thyme, rosemary, salt, and pepper.

Step 4 : Mix everything well and remove from heat.

Step 5 : Meanwhile, boil the potatoes until tender, mash them, and mix with the vegan margarine to make the mashed potatoes.

Step 6 : Place the filling in a baking dish, cover with the mashed potatoes, and bake at 180°C (356°F) for 25-30 minutes, or until golden.
