Ingredients

2 pounds of Yuca

2 tablespoons of Salt

1 pound of Ground meat

1 tablespoon of Vegetable oil

½ cup of Diced onion

1 tablespoon of Chopped garlic

2 tablespoons of Chopped cilantro

1 tablespoon of Worcestershire sauce

3 tablespoons of Tomato paste

1 pinch of Pepper

1 cup of Water

Preparation

Step 1 : In a pot with plenty of water, cook the yucas with salt until they are soft but firm when pierced.

Step 2 : Then, mash the yucas in a food processor until obtaining a puree.

Step 3 : Grease your hands with oil and knead the puree until achieving a smooth and firm dough.

Step 4 : If the dough feels sticky, it is recommended to sprinkle flour on your hands.

Step 5 : Season the meat with salt, pepper, and Worcestershire sauce.

Step 6 : In a skillet with hot oil, sauté the meat until loose, then add the remaining ingredients.

Step 7 : Let cook over medium heat for 15 minutes to reduce the liquid.

Step 8 : Remove from heat and let cool.

Step 9 : To assemble the carimañolas, take a piece of dough and form a tortilla with an opening in the center.

Step 10 : Place the ground meat in the center and close the carimañola so that the meat stays inside.

Step 11 : Finally, fry the carimañolas in abundant hot oil and place on a plate with paper towels to drain excess oil.
