Ingredients

1 Beef tongue

1 Tomato

2 Onions

1 Red bell pepper

2 cans of Tomatoes

1 Garlic head

1 pinch of Salt

2 Bay leaves

2 cups of Beef broth

½ cup of Red wine

½ teaspoon of Cumin

Aromatic herbs

2 cups of Water

3 tablespoons of Oil

3 tablespoons of Cornstarch

Capers and black olives

1 tablespoon of Sugar

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious tongue in sauce, first clean the tongue thoroughly.

Step 2 : Then, in a processor, combine water with an onion, half a bell pepper, 3 garlic cloves, aromatic herbs, salt, and pepper. Process this mixture and pour it into a pressure cooker where the tongue will be placed.

Step 3 : Cook for 1 hour until the tongue is tender.

Step 4 : Once cooked, remove from the broth, let it cool, and clean it thoroughly.

Step 5 : Cut the tongue into transverse slices.

Step 6 : In a skillet, heat the oil and sauté the onion with the garlic for about 2 minutes.

Step 7 : Then add the julienned bell pepper, tomato, tomato sauce, capers, and olives.

Step 8 : Add the beef broth, bay leaves, and cornstarch. Cook for 3 minutes.

Step 9 : Next, add the wine and let the sauce reduce slightly.

Step 10 : Then add the sliced tongue and mix all ingredients.

Step 11 : Let it cook over low heat for 20 minutes, ensuring the sauce does not dry out.

Step 12 : If necessary, add a little more water or broth.

Step 13 : Taste and adjust with salt and pepper, adding a touch of sugar.

Step 14 : Finally, serve the tongue covered in enough sauce.
