Stuffed Eggplants

2 Eggplants
1 Chopped onion
2 Minced garlic cloves
1 Chopped red pepper
200 grams of Minced meat
1 can of Crushed tomato
150 grams of Grated cheese

Preparation
Step 1 : To prepare this delicious dish, first cut the eggplants in half lengthwise and make diagonal cuts in the pulp, then sprinkle with salt and let them rest for about 30 minutes to release their bitter liquid.
Step 2 : Meanwhile, preheat the oven to 180°C and place the eggplants on a baking tray, drizzle with olive oil, and bake for approximately 30 minutes or until tender.
Step 3 : While the eggplants are baking, prepare the filling.
Step 4 : In a large skillet, heat a bit of olive oil and add the onion, garlic, pepper, and minced meat if desired.
Step 5 : Cook until tender and the meat is browned.
Step 6 : Then, add the crushed tomato and spices to taste, simmer for a few minutes to blend the flavors.
Step 7 : Once the eggplants are ready, remove them from the oven and, with a spoon, scoop out part of the pulp to make room for the filling.
Step 8 : Fill the eggplants with the prepared mixture and sprinkle grated cheese on top.
Step 9 : Return the eggplants to the oven and bake for another 15 minutes, or until the cheese is melted and golden.
