Stewed Pig's Feet in the Panamanian Style
Ingredients
2 kilograms of Pig's feet cut in half
1 cup of Chopped onion
4 Garlic cloves
2 cups of Diced tomato (without skin and seeds)
1 Red bell pepper
2 Sweet peppers
2 Lemons
4 cups of Water
3 teaspoons of Salt
1 cup of Oil
¼ teaspoon of Pepper
¼ cup of Chopped cilantro
2 ½ cups of Broth from the pig's feet
Preparation
Step 1 : To clean the pig's feet, rub them with lemon and wash before cooking in a pressure cooker with salt and enough water for 35 minutes.
Step 2 : Once tender, reserve the broth.
Step 3 : In a saucepan, heat a little oil and sauté the onion along with the garlic for 2 minutes.
Step 4 : Then add the tomato, peppers, paprika, and cilantro, and sauté for another 3 minutes.
Step 5 : Next, add the cooked pig's feet, the reserved broth, a touch of salt, and pepper.
Step 6 : Cook over low heat until the sauce thickens.
Step 7 : Finally, serve the pig's feet accompanied by rice.
