Shrimp rice is a popular dish in many culinary cultures, especially in coastal regions. The rice absorbs the flavors of the shrimp and spices, creating a tasty and comforting dish.
It is often served as a main course for lunch and dinner, and can be accompanied by fresh salad or fried plantains.
Shrimp Rice
Ingredients
1 ½ cup of Rice
2 pounds of Peeled shrimp
1 Onion
3 Garlic cloves
Cilantro
2 Large tomatoes
4 tablespoons of Olive oil
¼ cup of White wine
2 tablespoons of Butter
1 pinch of Salt
1 pinch of Black pepper
Preparation
Step 1 : The shrimp are marinated with salt and pepper for about 30 minutes.
Step 2 : Then, they are cooked in a pot with plenty of water for approximately 5 minutes.
Step 3 : Once cooked, they are removed from the water and the last one saved.
Step 4 : In a skillet, pour in olive oil and heat.
Step 5 : Add the rice and sauté.
Step 6 : Subsequently, incorporate 3 cups of the shrimp cooking water.
Step 7 : Cover the skillet, reduce the heat, and cook on low until the water has completely evaporated.
Step 8 : In a separate skillet, melt the butter and add the garlic.
Step 9 : Then add the shrimp and cook for about 3 minutes.
Step 10 : Next, add the tomatoes, finely chopped onion, and cilantro.
Step 11 : Cook for about 3 more minutes and add the white wine, cooking for an additional 5 minutes.
Step 12 : Once the rice is ready, incorporate it into the shrimp mixture in the skillet.
Step 13 : Mix well and cook until the rice has absorbed the flavors and is without liquid.
