Seafood Gucho
Ingredients

3 cups of Rice
2 kilograms of Mixed seafood
1 ½ kilogram of Shellless shrimp
1 cup of Chopped onion
½ cup of Chopped sweet chili pepper
½ cup of Diced bell pepper
4 Finely chopped garlic
¼ cup of Chopped green onion
½ cup of Chopped cilantro
½ cup of Peas
½ cup of Diced carrots
2 tablespoons of Curry powder
6 cups of Seafood broth
2 tablespoons of Oil
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large skillet, heat the oil and sauté the onion, garlic, bell pepper, and sweet chili pepper for 3 minutes.
Step 2 : Then add all the seafood with the curry and stir well to cook for another 5 minutes.
Step 3 : Next, incorporate the rice, stir well, and gradually add the seafood broth.
Step 4 : Add the carrots, peas, cilantro, and green onion.
Step 5 : Adjust the salt and pepper to taste.
Step 6 : Mix well, cover, and cook over low heat for 20 to 25 minutes.
