Salted Cod with Potatoes
Ingredients
400 grams of Salted cod
4 Potatoes
4 Carrots
1 Onion
4 Garlic cloves
Cilantro
Parsley
1 pinch of Salt
1 pinch of Pepper
2 tablespoons of Tomato sauce
Olive oil
Roasted peppers
Preparation
Step 1 : To prepare this dish, it is recommended to start by soaking the dried salted cod in water for 24 hours to desalinate, changing the water as needed.
Step 2 : Meanwhile, peel and cut the potatoes and carrots to cook them in salted water.
Step 3 : Once cooked, drain and set aside.
Step 4 : Next, boil the salted cod in water with a garlic clove for about 20 minutes.
Step 5 : Once cooked, remove from water and let rest before shredding, removing skin and bones.
Step 6 : Reserve this shredded salted cod.
Step 7 : In a skillet, add oil and sauté chopped onion and garlic.
Step 8 : Then add the shredded salted cod to the sauté, mixing well to combine the flavors.
