Ingredients

2 pounds of Salted cod

2 tablespoons of Tomato paste

4 Crushed garlic

2 Bell peppers

8 Chilies

3 Tomatoes

2 Medium onions

1 tablespoon of Oregano

1 tablespoon of Curry

2 tablespoons of Vinegar

½ cup of Vegetable oil

1 pinch of Pepper

Preparation

Step 1 : Place the salted cod in a pot with water along with a garlic clove, and boil for 20 minutes.

Step 2 : After that time, remove the cod from the water and let it rest until it reaches room temperature.

Step 3 : Then, shred the cod, removing the skin and bones.

Step 4 : In a skillet, add half a cup of oil and heat it up.

Step 5 : Add the tomato paste and cook until the oil turns a reddish color.

Step 6 : Next, incorporate the garlic, sliced bell peppers, chopped chilies, chopped tomatoes, sliced onions, oregano, curry, vinegar, and pepper to taste.

Step 7 : Once the vegetables are soft, add the cod, cover the preparation, and cook over medium heat for approximately 10 minutes.
