Rice with Taleno Chorizo and Sweet Peppers

Ingredients

2 cups of Rice

24 Finely chopped sweet peppers

1 kilogram of Taleno chorizo

3 Garlic cloves

½ cup of Chopped onion

1 teaspoon of Achiote powder

2 tablespoons of Olive oil

4 cups of Chicken broth

1 pinch of Salt

2 Sliced chorizo

1 pinch of Pepper

Preparation

Step 1 : After removing the wrapper from the chorizos, crumble the meat.

Step 2 : In a skillet with hot oil, add the crumbled and sliced chorizo, cooking for 5 minutes.

Step 3 : Add the onion, sweet peppers, garlic, achiote, salt, and pepper, sautéing everything for approximately 5 minutes.

Step 4 : Next, add the rice and broth, cooking over medium heat until it begins to dry.

Step 5 : Cover and reduce the heat to the minimum to finish cooking.
