Ingredients

5 Panamanian chorizos

2 cups of Rice

½ cup of Sweet pepper

2 tablespoons of Oil

1 pinch of Salt

1 Onion cut into small cubes

Chopped cilantro leaves

3 Bunches of chopped scallion

Annatto

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious rice, start by chopping the scallion into small pieces.

Step 2 : Then, wash the sweet peppers, cut them in half, and remove the seeds before finely chopping them.

Step 3 : In a large skillet, heat the olive oil and add the chopped chorizos.

Step 4 : Sauté for a few minutes until browned.

Step 5 : Next, add the onion and cook until transparent.

Step 6 : Add the sweet peppers, garlic, and continue mixing.

Step 7 : Incorporate the scallion and a touch of chopped cilantro.

Step 8 : Add the rice, annatto, salt, and pepper, mixing everything so the rice absorbs the flavors for a few minutes.

Step 9 : Pour in the water and cook over high heat until the liquid evaporates.

Step 10 : Lower the heat, add more chopped cilantro, and cover the skillet until the rice is ready to serve.
