Ingredients
500 grams of Quimbol beans
5 Garlic cloves
2 Bay leaves
Fresh thyme
Fresh rosemary
500 grams of Chicken
Cumin
Oregano
Oil
1 Onion
6 Tomatoes
1 Sweet chili pepper
1 Bell pepper
2 Carrots
4 Potatoes
Chopped cilantro
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To start, peel the potatoes and cut them into cubes, as well as the carrots, and set them aside.
Step 2 : Next, cut the chicken and also set it aside.
Step 3 : Then, wash the beans and place them in a pot with the garlic, bay leaves, thyme, and rosemary to cook on high heat with the lid on for half an hour.
Step 4 : After that time, wash the chicken and add it to the preparation, cooking for an additional 20 minutes.
Step 5 : Meanwhile, chop the onion, bell pepper, chili pepper, and tomatoes, then place them in a skillet with oil and season with cumin, oregano, and cilantro.
Step 6 : Cook for another 10 minutes until the liquid reduces.
Step 7 : Add this mixture to the beans, including the carrots and potatoes, and stir well.
Step 8 : Season with salt and pepper and cook for another 20 minutes on low heat.
Step 9 : Finally, remove from heat, let it rest for a few minutes, and it’s ready to serve.
