Panamanian-Style Onion Liver

Ingredients

4 Fresh liver steaks

Paprika

Cumin

1 pinch of Salt

1 Green chili pepper

1 Red chili pepper

1 Large onion

2 Garlic cloves

Tomato or tomato sauce

Vegetable oil

English or chinese sauce

1 pinch of Pepper

Preparation

Step 1 : The liver steaks are washed and seasoned with salt, pepper, paprika, oregano, and cumin, then set aside to marinate and absorb the flavors.

Step 2 : Chop the onion into thick julienne strips, as well as the green chili, red chili, garlic, and tomatoes, and set aside.

Step 3 : In a hot skillet with oil, sear the liver steaks on both sides for approximately 5 minutes each.

Step 4 : Add English or Chinese sauce to taste, turn the steaks, and remove from the skillet.

Step 5 : Then, in the same skillet, add more oil, the chopped onion, garlic, green chili, red chili, a bit of tomato sauce, and sauté.

Step 6 : Add a little water and place the liver steaks into the sauté, turn them over, and cover to cook together, blending the flavors and aromas.

Step 7 : Let cook until juicy and ready to serve.
