Panamanian-Style Chicken and Rice

Ingredients

2 kilograms of Diced chicken

½ kilogram of Rice

4 Bell peppers

4 Tomatoes

4 Hot peppers

1 Large onion

4 Garlic cloves

2 tablespoons of Oil

2 tablespoons of Margarine

½ cup of Chopped olives and capers

1 can of Small tomato paste

1 cup of Peas

Parsley

4 cups of Water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pan, heat the oil with the margarine, and brown the chicken slightly.

Step 2 : Then, add the tomatoes, onion, hot peppers, and garlic finely chopped, stirring well to combine the flavors.

Step 3 : Next, incorporate the tomato paste, capers, and olives, adding water and cooking covered on low heat for 20 minutes.

Step 4 : After the time has passed, remove the chicken and set aside.

Step 5 : Then, add the previously washed rice to the stew, adding water until the rice is covered, and cook covered on low heat for another 20 minutes.

Step 6 : Afterward, add the chicken, sliced bell peppers, peas, and season with salt and pepper.

Step 7 : Mix all ingredients and remove from heat.

Step 8 : Finally, serve the dish garnished with chopped parsley.
