Panamanian Mondongo

Panamanian Mondongo

Ingredients

1 ½ kilogram of Mondongo

1 cup of Olive oil

1 cup of Chopped onion

3 Garlic cloves

1 can of Tomato sauce

1 Chombo chili, chopped

2 cups of Cubed potatoes

2 cups of Chopped carrots

1 Cilantro bunch

2 cups of Hot water

2 teaspoons of Salt

1 teaspoon of Pepper

2 Lemons

3 tablespoons of Oil

Preparation

Step 1 : To prepare this delicious dish, first wash the mondongo well by rubbing it with lemon.

Step 2 : Then, place it in a pressure cooker with plenty of water and cook for about 30 minutes, until tender.

Step 3 : In a saucepan, heat a little oil and sauté the onions with the garlic for about 2 minutes, until wilted.

Step 4 : Next, add the tomato sauce, chopped cilantro, potatoes, carrots, salt, and pepper.

Step 5 : Cook this mixture for 10 minutes.

Step 6 : Once this time has passed, add the previously cooked mondongo pieces along with the chopped chili.

Step 7 : Cook everything for another 5 minutes, until the sauce begins to thicken.

Step 8 : Finally, serve this exquisite dish hot, and it can be accompanied with white rice.
