Green Rice
Ingredients
1 cup of White rice
1 ½ cup of Hot water
1 tablespoon of Chicken broth
2 cups of Fresh spinach leaves
½ cup of Cilantro sprigs
1 cup of Evaporated milk
2 tablespoons of Butter
1 tablespoon of Olive oil
½ Finely chopped yellow onion
1 Garlic clove, finely chopped
Preparation
Step 1 : Wash the rice with water for 15 minutes and drain.
Step 2 : Mix the water with the broth, add the spinach, cilantro, and process in a blender.
Step 3 : Add the evaporated milk and blend again.
Step 4 : Heat the oil and butter in a skillet until melted.
Step 5 : Add the rice and cook, stirring constantly for 5 minutes.
Step 6 : Add the onion and garlic, and cook for one more minute.
Step 7 : Incorporate the spinach and cilantro, continue cooking while increasing the heat slightly.
Step 8 : Cook until it boils, then reduce the heat and cook for an additional 20 minutes.
Step 9 : Stir carefully, cover, and cook for two more minutes.
Step 10 : Remove from heat, let rest for a few minutes, and serve.
