Gallo pinto
Ingredients
½ kilogram of Rice
½ kilogram of Beans
1 kilogram of Pork tail
3 Medium onions
2 Tomatoes
1 Bell pepper
4 Garlic cloves
5 Chopped culantro leaves
2 Chicken broth cubes
2 tablespoons of Soy sauce
2 tablespoons of Worcestershire sauce
1 can of Tomato sauce
¼ cup of Oil
Preparation
Step 1 : The pork tail is soaked in water to remove excess salt for 30 minutes and then reserved.
Step 2 : In a pot with hot water, add the pork tail, one onion, chopped bell pepper, minced garlic, culantro, Worcestershire sauce, soy sauce, and broth cubes, cooking over low heat for 30 minutes.
Step 3 : Then add the rice and cover with water if necessary, cooking on low heat, well covered, for about 20 minutes.
Step 4 : In a separate skillet, heat oil and sauté two chopped onions and diced tomatoes, add tomato sauce and cook for 10 minutes over medium heat.
Step 5 : Finally, serve the Gallo Pinto with a little sautéed mixture on top to enjoy.
