Fish with Coconut Milk
Ingredients
2 pounds of Fish
½ Onion
1 Bell pepper
4 Cilantro stems
2 Garlic cloves
2 cups of Coconut milk
2 tablespoons of Achiote
¼ cup of Oil
1 Bouillon cube
½ Lemon
1 pinch of Salt
Preparation
Step 1 : To prepare this delicious dish, it is recommended to start by seasoning the fish with salt to taste.
Step 2 : Next, mix the oil with the achiote and stir for about 10 minutes to let the achiote release its color.
Step 3 : Then, strain the oil with achiote and add it to a heated pot along with the chopped onion, garlic, bell pepper, and cilantro.
Step 4 : Sauté the mixture for approximately 2 minutes, then add the coconut milk and the bouillon cube, stirring well until all ingredients are integrated.
Step 5 : Once the ingredients are well combined, gently add the fish, making sure the coconut milk covers all of it.
Step 6 : Let it cook over low heat for about 20 minutes.
Step 7 : Finally, once the fish is ready, remove from heat and add the juice of half a lemon to finish the preparation.
