Domplines with Codfish
Ingredients
2 pounds of Flaked codfish
1 Chombo chili, chopped
1 Chopped parsley sprig
1 Cubed onion
3 tablespoons of Coconut oil
2 Chopped sweet peppers
2 Cooked tomatoes
2 tablespoons of Tomato paste
½ cup of Natural water
1 tablespoon of Vinegar
1 ½ teaspoon of Curry
3 cups of Wheat flour
1 ½ tablespoon of Baking powder
1 ¼ cup of Hot water
2 Eggs
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a skillet with coconut oil, fry the onion, Chombo chili, parsley, peppers, and tomato for 5 minutes.
Step 2 : Add tomato paste, spices, water, vinegar, and codfish. Season with salt and pepper, and cook covered for 20 minutes.
Step 3 : Meanwhile, mix flour with baking powder, hot water, and salt; knead and add eggs, then let the dough rest for 20 minutes.
Step 4 : Roll out the dough and cut circles to fill with codfish. Fold and seal. Boil the dumplings for 15 minutes and serve.
Step 5 : To desalinate the codfish, soak in warm water for 5 hours or overnight, changing the water several times.
Step 6 : If coconut oil is not available, use 3 tablespoons of butter.
Step 7 : Optionally, add capers and olives to the codfish filling.
