Ingredients

1 Piglet

2 cups of Pork lard

2 cups of Chopped green onion

3 Diced onions

3 pounds of Dried peas

3 pounds of Chopped potatoes

2 pounds of Cooked rice

Juice of six bitter oranges

1 cup of Water

2 tablespoons of Ground cumin

1 tablespoon of Ground oregano

1 tablespoon of Garlic powder

2 tablespoons of Annatto

2 tablespoons of Ground rosemary

1 teaspoon of Ground thyme

2 cups of White wine

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the piglet, first clean the pig and remove all the meat, saving the ribs.

Step 2 : Then, mix the meat with the marinade and place it in the refrigerator for 1 hour.

Step 3 : To make the filling, sauté onions in lard until golden, then add the meat with lard and cook.

Step 4 : Add the other ingredients to the sauce and stuff the piglet with this mixture.

Step 5 : Once stuffed, bake the piglet at 250°C for 3 hours.

Step 6 : After this time, reduce the temperature to 180°C and continue baking for another 2 hours.

Step 7 : At the end of cooking, remove the piglet from the oven and let it rest before cutting and serving.
