Ingredients

1 pound of Bone-in pork shoulder with little fat, skinless

3 tablespoons of Ground onion

3 tablespoons of Ground garlic

3 Lemons

1 teaspoon of Oregano

1 tablespoon of Sugar

2 teaspoons of Salt

1 tablespoon of Vinegar

Hot sauce

Preparation

Step 1 : To prepare the pork shoulder, it is recommended to wash it well, rub it with lemon, and prick it all over.

Step 2 : Next, prepare a sauce by mixing ground onion, ground garlic, oregano, salt to taste, sugar, vinegar, lemon juice, and hot sauce to taste.

Step 3 : After mixing all the ingredients, rub the pork shoulder with this sauce, making sure to reach all corners of the meat.

Step 4 : Then, let the pork shoulder rest for 2 hours.

Step 5 : Subsequently, preheat the oven to 400 degrees Fahrenheit.

Step 6 : Once the desired temperature is reached, place the pork shoulder on a tray inside the oven and reduce the temperature to 300 degrees Fahrenheit.

Step 7 : The cooking time varies depending on whether the shoulder has bone or not.

Step 8 : If it has bone, it is recommended to cook for 30 minutes per pound (about 2.5 hours), whereas if it is boneless, cook for 20 minutes per pound (approximately 1.5 hours).
