2 kilograms of Corn
4 cups of Raspadura
2 liters of Water
Preparation
Step 1 : To prepare this delicious and refreshing corn-based drink, the first step is to carefully clean the corn, removing the grains that will not germinate.
Step 2 : Then, wash it several times and strain before storing it in a well-sealed bag or henequen, where it will germinate in approximately 3 days.
Step 3 : Once the corn has germinated, it should be thoroughly washed to remove any unpleasant taste, keeping the shoots and roots.
Step 4 : Next, grind it in a mill and strain the resulting mixture through a sieve.
Step 5 : The next step is to place the corn juice in a saucepan and cook over moderate heat, stirring continuously to prevent sticking.
Step 6 : This cooking process can last several hours until the preparation thickens and takes on a caramel color.
Step 7 : Once the mixture is ready, dilute the raspadura in the water and set aside.
Step 8 : Then, take a portion of the thick cream and dilute it in the previously sweetened water.
Step 9 : Finally, serve immediately as a cold and refreshing drink.
