Panamanian Resbaladera

Ingredients

1 cup of Long grain rice

1 cup of Barley

2 Cinnamon sticks

5 Cloves

4 cups of Water

1 pinch of Ground cinnamon

1 pinch of Ground nutmeg

1 tablespoon of Vanilla extract

3 cans of Evaporated milk

1 cup of Sugar

Preparation

Step 1 : In a pot, place the rice, barley, and cloves.

Step 2 : Add 3 cups of water and bring to a boil over high heat.

Step 3 : Once it boils, reduce the heat.

Step 4 : Cover the pot and cook for 20 minutes, occasionally checking if more water needs to be added.

Step 5 : After cooking, let the mixture rest for 15 minutes and remove the cinnamon sticks.

Step 6 : Add the ground nutmeg and vanilla extract.

Step 7 : Allow the mixture to cool and then blend half of it.

Step 8 : Add one and a half cups of evaporated milk until achieving a smooth consistency.

Step 9 : Strain the mixture into a pitcher, discarding the rice and barley grains but trying not to waste the liquid.

Step 10 : Repeat with the other half of the mixture and add sugar to taste.

Step 11 : If a thinner consistency is desired, add more water.

Step 12 : Once ready, chill the mixture in the refrigerator for 3 or 4 hours and then serve.
