Ingredients

3 pounds of Corn dough

1 Chopped chicken

1 cup of Chopped onion

½ cup of Ajies

3 Garlic cloves

4 Cilantro leaves

1 teaspoon of Achiote seasoning

1 cup of Tomato sauce

1 teaspoon of Oregano

½ cup of Olives

½ cup of Peas

½ cup of Raisins

Bijao leaves

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious dish, first season the chicken with salt and pepper.

Step 2 : In a pan, sauté the peppers, onion, cilantro, and garlic along with the chicken.

Step 3 : Then, add the tomato paste, tomato sauce, and season with achiote.

Step 4 : Let it cook for ten minutes and then add enough water to submerge the chicken.

Step 5 : Cover and simmer until soft.

Step 6 : To give it a special touch, add raisins, olives, and cook for an additional 20 minutes.

Step 7 : Finally, add the peas and, if necessary, a little more water.

Step 8 : Once the preparation is ready, place everything in a colander and add the resulting broth to the corn dough, kneading well until smooth and uniform.

Step 9 : Next, pass the bijao leaves through boiling water.

Step 10 : Pour a spoonful of dough onto each leaf, add a piece of chicken with vegetables, and cover with more dough.

Step 11 : Wrap and tie. Repeat this process until all the dough is used.

Step 12 : In a large pot with boiling water, place the tamales and cook for one hour.

Step 13 : Once ready, serve and enjoy this exquisite dish full of traditional flavors.
