2 pounds of Pork legs
1 Large onion
2 Medium cucumbers
Ají chombo
Cilantro
1 cup of Lemon juice
5 Garlic cloves

Step 1 : To begin, peel the cucumber and slice it to the desired thickness.
Step 2 : Then, julienne the onion and cut the ají chombo in half, removing the seeds, then chop it into small pieces, reserving them.
Step 3 : It's important to wash the pork legs thoroughly and try to remove any hairs, which can be done by placing them directly over the flame.
Step 4 : Place the pork legs, garlic, cilantro, salt to taste, and enough water to cover all ingredients in a sufficiently large pot.
Step 5 : Bring to a boil and cook until the garlic is tender, reserving one cup of cooking water.
