Ingredients

2 pounds of Pork legs

1 Large onion

2 Medium cucumbers

Ají chombo

Cilantro

1 cup of Lemon juice

5 Garlic cloves

Step 1 : To begin, peel the cucumber and slice it to the desired thickness.

Step 2 : Then, julienne the onion and cut the ají chombo in half, removing the seeds, then chop it into small pieces, reserving them.

Step 3 : It's important to wash the pork legs thoroughly and try to remove any hairs, which can be done by placing them directly over the flame.

Step 4 : Place the pork legs, garlic, cilantro, salt to taste, and enough water to cover all ingredients in a sufficiently large pot.

Step 5 : Bring to a boil and cook until the garlic is tender, reserving one cup of cooking water.

Step 6 : Once the pork legs are tender, add them to a separate container along with the onion, cucumber, ají chombo, lemon juice, and the reserved cup of cooking water.

Step 7 : Mix all ingredients well and ensure they are combined evenly.

Step 8 : Cover the container and let the mixture rest for 2 hours before serving.
