Ingredients

1 kilogram of Pork feet

1 cup of Lemon juice

1 Large red onion

1 Large cucumber

2 Ají chombo

3 Garlic cloves

3 Culantro leaves

Water

1 pinch of Salt

Preparation

Step 1 : The pork feet are washed and all hairs are removed.

Step 2 : Those that cannot be removed are simply burned.

Step 3 : Place the pork feet in a pot with garlic, culantro, salt, and cover with water.

Step 4 : Boil until tender, reserving the cooking water.

Step 5 : Peel and julienne the onion, setting aside.

Step 6 : Wash the cucumber and cut into slices, also setting aside.

Step 7 : Cut the Ají Chombo in half and remove the seeds.

Step 8 : Transfer the pork feet to a deep bowl and mix with the onion, cucumber, and ají.

Step 9 : Add lemon juice and one cup of the cooking water.

Step 10 : Mix everything and let marinate for two hours before serving.
