Rice with pigeon peas and coconut
Ingredients
1 Coconut
1 cup of Long-grain rice
1 teaspoon of Vegetable oil
½ Onion
1 cup of Fresh pigeon peas
3 Cilantro leaves
2 cups of Water
1 pinch of Salt
Preparation
Step 1 : First, finely chop the onion.
Step 2 : Then, in a large pot, heat the vegetable oil and sauté the onion along with the pigeon peas until the onion becomes translucent.
Step 3 : Next, add the chopped cilantro and the previously washed and drained rice.
Step 4 : Allow to cook for a while, then add water and salt to taste.
Step 5 : When the contents of the pot start boiling, reduce the heat and cover the pot.
Step 6 : Let it cook this way for at least 20 minutes.
Step 7 : After this time, uncover the pot and taste the rice with pigeon peas carefully.
Step 8 : If necessary, adjust the seasoning by adding a little more salt.
