Ingredients

½ Chopped onion

½ Chopped bell pepper

Chopped garlic

2 tablespoons of Chopped cilantro

1 Tomato sauce packet

1 Cubed eggplant

1 Cubed green zucchini

1 Cubed yellow zucchini

2 Cubed roma tomatoes

Preparation

Step 1 : In a large skillet, heat a little oil and add the onion and bell pepper until softened.

Step 2 : Then, add the garlic and cook for a few more minutes.

Step 3 : Add the tomato sauce to the skillet and let it cook slowly until it reduces.

Step 4 : Add a little water, cilantro, and salt to create the sauce.

Step 5 : If desired, you can include pepper and a touch of spice.

Step 6 : Once the sauce is boiling, add all the vegetables and cook over low heat for approximately 8 minutes with the skillet covered.
